Chef Matthew Britton, a proud Lubbock native, has returned to the culinary scene and joined the Overton Hotel family. A graduate of Lubbock High School, Matt’s journey took him through various experiences after earning a degree in Mass Communication from Arizona State University.

“We could not be more enthusiastic about having Matt be our new Executive Chef here at Overton Hotel. I know he will make all of our guests and the community happy with just a single taste of his food.” stated Kurt Metcalf Overton’s General Manager.

Despite his academic background, Matt’s intrest in the restaurant industry was sparked while bartending in the vibrant “Old Town” Scottsdale district. This curiosity evolved into a passion that led him to enroll in Le Cordon Bleu’s Culinary Program at the Scottsdale Culinary Institute.

Following his completion of the institute, Chef Matt embarked on an internship at the Arizona Biltmore, a Waldorf Astoria Resort, eventually finding his place at the Westin Kierland Resort and Spa in Scottsdale. Specializing in Italian Cuisine and exploring innovative food fusions, Matt made significant contributions to the Phoenix culinary scene.

However, his interest in the media world drew him back to Lubbock, where he joined the radio industry. It was during this time that Matt met his future wife, Kathy, and the two were married in 2004. Together, they opened La’Bowski’s in Downtown Lubbock, a modern breakfast/bistro concept that flourished until 2009.

Following La’Bowski’s, Matt took on a new role, creating and implementing a culinary program with the Slaton Independent School District. For five years, he shared his expertise as a culinary instructor. After he successfully ran the program, Matt transitioned into the role of a restaurant consultant, contributing to the improvement of various local and private establishments that are now popular dining destinations for many Lubbock residents.

Excited to be a part of the Overton Hotel, Chef Matt is eager to explore and bring forth the best culinary experiences to the community. “Being in the industry and Lubbock as long as I have, I know I can execute the role of Executive Chef well here at Overton Hotel. I am excited to show the guests and community just what we have to offer.”
